Beet, Honey, & Ricotta Sourdough Toast [USA]


Anyone else here in love with the color of beet stains? Because we are! 🤣 Here is a simple no recipe recipe for a quick morning toast. The key ingredient is actually the finishing salt to balance out the sweetness of the beet and honey. We used a sprinkling of fleur de sel, which is a flaky sea salt that is less dense than table salt and adds a nice little bit of crunch.

So in order to quickly put together this toast in the mornings, you will need to do a bit of prep work the night or a few days before. In other words, cook those beets ahead of time! Unless you have a pressure cooker on hand, beets can take a while to cook through and is not something that we find enjoyable to do when we wake up.


  • Unsalted butter
  • Sourdough bread
  • Cooked beets
  • Ricotta cheese
  • Honey
  • Fleur de sel


  1. Toast the bread. Butter both sides of a 3/4-inch thick slice of sourdough bread and toast it to perfection.
  2. Slice the beets. In the meantime, thinly slice the cooked beets and set aside.
  3. Top the toast. When the toast is ready, top with a generous spread of ricotta. Then layer the beets on top of the ricotta any way you like. For fun, you can dab the beets miscellaneously all over the ricotta before laying them down for some pops of color. Then, finish with a drizzle of honey and a sprinkle of fleur de sel.
